Head Sommelier Paul DiMario

Paul grew up in central Massachusetts. Having grown up an avid skier, Paul attended Carrabassett valley academy at Sugarloaf mountain in Maine. After a failed attempt at making ski racing a career he moved to North Carolina where he attended the University of North Carolina at Chapel Hill. While there he began working in restaurants where he caught the wine bug. In 1998 Paul Returned to the metro west region of Massachussets where he continued to broaden his food and wine knowledge. In 2000 he opened Flemmings Restaurant as assistant Wine Director. A year Later he began to feel the pull of Mountain life. In May of 2001 he packed the car and headed west where he landed in Vail. It did not take long before he was running the beverage program for Zino Ristorante in Edwards. Here he was able to concentrate on studying wine in a more formal setting. In 2003 he was introduced to the Ferzacca family who owned La Tour Restaurant in Vail. Here he was encouraged to join the court of master sommeliers. After Passing the Advanced Sommelier Course in 2009 he continues his studies of fulfilling his dream of one day becoming a master Sommelier.
