Colorado Lamb Rack chops

Mint Salsa
Roma Tomatoes diced _"
Red Onion diced _ "
Serrano Chiles minced
Garlic minced
Fresh Mint chopped
Salt
White Ground Pepper
Lime Juice

1 Whole lamb Rack or 16 ea

1 ea for a medium spicy salsa
2 ea. cloves
1 bunch or 2 tablespoons
To Taste

Fresh Squeezed from 1 small lime or _ oz.

 

Procedure:

  1. Combine all ingredients for mint salsa, season with salt, pepper and lime juice, reserve for later.
  2. Have your butcher clean the lamb racks to individual chops, removing any unnecessary fat and sinew.
  3. Pre-Heat Grill. Season lamb racks with salt and ground white pepper. Grill to proper temperature and serve with Mint Salsa.
