History
Paul and Lourdes Ferzacca bought La Tour in 1998 with the
goal of turning it into the best French restaurant in the
Vail Valley. Paul is the executive chef and is assisted in
the kitchen by Chef Nicole Pederson. Lourdes works the front
of the restaurant, meeting and greeting guests, creating a
superior dining environment with the help of General Manager
Ward Mack.
Paul and Lourdes transformed the Vail Village landmark to
reflect the warmth of a home with its burgundy, blue and yellow
walls. Colorful, nationally-recognized artwork adorns the
walls and keeps the interior looking fresh and contemporary.
Each table boasts a crisp white tablecloth and stylish place
settings. The Ferzacca’s turned the brick patio into
an enclosed bistro with a river-rock fireplace, enabling them
to use the space year-round. The star of the show is Chef
Ferzacca’s mouth-watering French American cuisine and
award-winning wine list. His cuisine is light, contemporary
French utilizing the highest quality products available. The
menu changes with the seasons and always features new exciting
dishes. “The whole menu reflects what I want to eat,”
comments Ferzacca. Since the Ferzacca’s took over La
Tour in 1998, Paul has continuously created elegant food that
tastes great.

“Simplicity is the mother of beauty” -
Paul Ferzacca
Honored as one of the best undiscovered chefs in the country,
Chef Paul Ferzacca has a standard of quality and consistency
in his mouth-watering French American cuisine that is unsurpassed.
To that end, Ferzacca serves his simple treasures night after
night at La Tour, a French American restaurant located in
the heart of the Vail Village where he has delighted customers
since 1998.
Ferzacca arrived in Vail in 1991 only to transform the industry
of on-mountain ski resort dining. As Executive Chef of the
Two Elk Restaurant atop Vail Mountain at the elevation of
11,250 feet, Ferzacca rose to the challenge of cooking at
an extremely high elevation. He served exquisite food to thousands
of skiers and snowboarders with discriminating tastes. Ferzacca
immediately gained rave reviews from the culinary press with
articles in Bon Appetit, SKI, Snow Country, New York Times,
Nations Restaurant News, Chef, Rocky Mountain News, Denver
Post and all of his local press.
In 1995, Ferzacca assisted in opening the exclusive Game Creek
Club on Vail Mountain. He brought his expertise to the fine
dining chalet that seats some 175 members for elegant lunches
and multi-course evening fixed menus. While serving up exquisite
cuisine with Vail Resorts, Inc., Ferzacca was also a chef
instructor at the Vail-based Johnson and Wales University
– the only ski resort culinary school in the world.
Ferzacca’s love and passion for cooking became evident
nationally with his invitation to cook at the James Beard
House in New York City, where he was honored as one of the
best undiscovered chefs in the country. He has been selected
as a featured chef in several prestigious food and wine festivals
around the world: The 1997 Taste of Vail, 1999 Chesapeake
Bay Wine Festival, 1999 Puerto Vallarta Gastronomic Festival
in Mexico, 2000 Vail Valley Wine Auction and the 2004 Taste
of Vail.
A native of Chicago, Ferzacca studied both Architecture and
later Restaurant Management in college and holds a degree
from the Culinary School of Kendall College.
He moved to Vail for the love of the recreational lifestyle,
which he enjoys with his wife, Lourdes and two children JonPaul
and Nina. In 1998, Ferzacca fulfilled his lifelong dream and
became the Owner and Chef of the famous French American restaurant
La Tour, voted best French restaurant in the Vail Valley by
the Vail Daily Readers Poll. Ferzacca has also received Wine
Spectator Awards of Excellence on his wine list.
